Grapefruit and Honey Chicken Wings

Hella Grapefruit: I have to admit, I’m not too big of a fan of grapefruit by itself, but I’m a huge fan of it in cocktails and as a glaze for Grapefuit and Honey Chicken Wings. Something magical happens when the bitterness of the grapefruit and the sweetness of the honey coats the crispy chicken. Perfect for the long weekend or a snack while binge watching your favorite TV shows.

Serves 2 (or 4 as a snack)

Ingredients:

  • 18 chicken wings (drumettes and flats)

  • 1 tablespoon chicken bouillon

  • 1 tablespoon soy sauce

  • 1 teaspoon sugar

  • 1/3 cup honey

  • Zest and juice of 1 ruby red grapefruit

  • 2 teaspoons cornstarch mixed with 2 tablespoons water (this is called a “slurry”)

  • 6 tablespoons cornstarch (for dredging)

  • Vegetable or canola oil (for frying)

  • Sesame seeds (for garnish)

  • Kosher salt

Steps:

  1. Make the marinade. In a large bowl, combine the chicken boullon, soy sauce, and sugar until mixed. Add in the chicken wings and coat them with the marinade. Use your hands because you want to massage the marinade into every part of the wings. Let sit as you make the glaze.

  2. In a small sauce pan, heat up the honey, zest, and juice over medium heat until all the flavors mix. Add in the cornstarch slurry, and turn the heat to medium-high. Mix vigorously, and the sauce will start to thicken up. When it gets thickened, remove from heat immediately, add to a large bowl, and set aside.

  3. Place 6 tablespoons of cornstarch onto a plate. One by one, dredge each of the wings in the cornstarch so they are coated on all sides. Time to fry the chicken.

  4. In a medium pot, heat up enough oil to deep fry to 350 degrees. Add enough chicken to the hot oil and fry for 8 minutes. Be careful not to overcrowd. If you crowd the pot, it will bring down the temperature too low and you won’t get a good crisp. Transfer the batch to a plate lined with paper towels and sprinkle some salt on top. Cook the next batch until you’re done.

  5. Toss the fried wings into the bowl with the glaze and coat in the sauce. Transfer to a plate and garnish with sesame seeds.

  6. Crack open a beer, and eat them wangs!
