Savory Oats with Kielbasa and Eggs
Wait, SAVORY oatmeal?! Most folks are used to putting sweet toppings on oatmeal, and while that’s delicious, I’d rather put eggs and meat on mine. You’ll be surprised how good it is because the rolled oats are a vessel for flavors and they are super healthy! Honestly, I don’t know if I will ever go back to sweet oatmeal…unless it’s in a cookie.
Serves 2
Ingredients:
2 cups water
1 cup quick-cooking rolled oats
1 teaspoons garlic powder
1 tablespoons parmigiano reggiano
1 tablespoon sliced green onions
4 poached eggs (or fried eggs will work)
10 slices of kielbasa
Kosher salt and ground pepper
Steps:
In small pot, bring water to a boil with a pinch of salt. Drop in the rolled oats and garlic powder and cook for 3 minutes while you poach eggs.
In another small saucepan, bring 4 cups of water plus 1 tablespoon of vinegar to a simmer. Create a vortex by spinning the water around with a spoon. Drop in an egg in the center of the vortex and cook for 2 minutes. Carefully remove the egg and place on a paper towel to drain. Repeat with the rest of the eggs..
In a small pan, sear the slices of kielbasa on both sides.
To plate, add 1 cup of oats to the bottom of a bowl. Place 2 poached eggs on top along with half the kielbasa. Garnish with sliced green onions and pepper. Enjoy your day!
